This collaboration has been a long time coming. With a vast ocean between us, we decided to swap recipes, and brew exactly to the specification of the original beer. On our side, we have brought back a long time favorite of head brewer Andrew, Gramarye Pale Ale. An easy drinking pale ale with a rye backbone and light citrus and floral hop characters. Be a heretic and dive into some Gramarye.

This pale ale is made with Centennial and Citra hops as the base, and accented with Stata. A dank undertone adds to the clean and sweet citrus aromas and a tropical feel. A crisp bitterness and dry mouthfeel are balanced with citrus and tropical flavors. This is a great montage of hops from the 90's, 00's, and 10's.

Columbus hops are overwhelmingly popular for their bitterness, but when it comes to aroma, most don’t know how to handle them. In order to make Columbus a "Little Giant," the DH was assembled with Columbus as the main hop, and balanced with Mosaic and Simcoe to prevent its characteristics from becoming too strong. Aromas of dank, orange, and muscat, with a good mouthfeel from the extra wheat malt ensure this beer can hold its own.

On our second beer using uchiwa cactus, we went for a more restrained and balanced profile. Mixing Farmhouse saison and PhillySour yeast, we ended up with aromatic esters from the Farmhouse strain, smooth peach and subtle tartness with a gentle acidic finish from PhillySour, and of course a pink hue from the cactus, all adding to the juiciness. No slacking off this time, we’re ‘farming’ for flavor!
