We worked together with the employees of Yurakucho Station to create a truly international IPA. We used a plethora of ingredients from 6 different countries (USA, France, Australia, Germany, England, and Japan). Greatly balanced bitterness with citrus fruits, spice, and herbal notes. Brewed in memory of the famous US homebrewer, Tasty McDole’s “Janet’s Brown”. Just the right balance of malty chocolaty goodness and the hoppiness of two classic hops, cascade and centennial. For the first collaboration beer of the year, we were honored to brew up this coffee infused Schwarzbier with Godspeed Brewing from Toronto. With just the right mix of crushed and whole bean coffee, we got a gentle but eye opening aroma, and a roasted backbone from the darker malts. Nothing says class like Asa-Ichi in your glass.

Spelt Wine
Spelt, also known as dinkel wheat in Germany, has been farmed by humans for over 9000 years. Although rare, it can be used in small amounts to add some creaminess and earthiness, injecting complexity to a beer. We wondered, what it would be like to do a high alcohol beer, like a barely wine, with 51 plus percent spelt in the grist to create Japan’s first true Spelt Wine. Velvety-smooth body, with Tokyo Aleworks’ signature high level of drinkability for 8%, and most notably, hints of spices like nutmeg and allspice.
