Columbus hops are overwhelmingly popular for their bitterness, but when it comes to aroma, most don’t know how to handle them. In order to make Columbus a "Little Giant," the DH was assembled with Columbus as the main hop, and balanced with Mosaic and Simcoe to prevent its characteristics from becoming too strong. Aromas of dank, orange, and muscat, with a good mouthfeel from the extra wheat malt ensure this beer can hold its own.

Spelt Wine
Spelt, also known as dinkel wheat in Germany, has been farmed by humans for over 9000 years. Although rare, it can be used in small amounts to add some creaminess and earthiness, injecting complexity to a beer. We wondered, what it would be like to do a high alcohol beer, like a barely wine, with 51 plus percent spelt in the grist to create Japan’s first true Spelt Wine. Velvety-smooth body, with Tokyo Aleworks’ signature high level of drinkability for 8%, and most notably, hints of spices like nutmeg and allspice.
